Markdown is simple text formatting style.
My favourite Markdown editor varies depends on the task at hand. Many of these tools have features like tags, categories, or meta-data or actively encourage the activity of note-taking, or assist in connecting notes in a way that your collection of notes becomes as meaningful and connected entity (rather just a collection of notes).
MacDown
Is fast becoming my favourite markdown editor because it's super-simple.
Zettlr
I like Zettlr because, although it's simple, you can also have a list of files in your sidebar - which is really useful for jumping between pages. I like it because it's both minimal and powerful, if that's possible.
Other Markdown Editors
This StackEdit is a wonderful little browser-based Markdown editor. Your pages are stored in the browser (but not online.)

Logseq
Logseq is free tool for note-taking. It uses the Markdown format. Interestingly, when you open it, it opens on page that has the date as a header, sort of prompting you to just note what you're thinking now. It's helping you to "just get your ideas down".
Additionally it has a network viewer, so you can see your notes as a connected visualisation. What I don't like about Logseq is that it creates miscellaneous files I don't want.
